Chocolate brownies

Who doesn't love ice cream with brownies? These easy gluten-free, dairy-free and sugar-free brownies are rich, full of flavour and can be made in less than an hour!

Ingredients

1 1/2 cup Almond Flour (150g)

1/4 cup Cocoa powder

1/4 tsp Baking soda

1/4 tsp salt

3/4 cup Nativia Living Natural Sweetner @natvialiving (145g)

3 tbsp Coconut oil @vitacocoeu, melted

1 Large egg

1 Egg yolk

1 tsp Vanilla

Method

1. Preheat your oven to 180 degrees and line the bottom of an 8-inch pan with parchment paper.

2. In a medium bowl stir together the almond flour, cocoa powder, baking soda and salt. Set aside. 

3. In a separate bowl, use an electric hand mixer to beat Natvia and oil just until is moist. Add in all the remaining ingredients and beat until combined. Top tip - don't beat too much air into the batter or the brownies will sink when cooking.

4.  Pour the dry ingredients into the wet mix and stir (by hand) until well combined. 

5. Stir in the chocolate chips, raspberries or nuts if you fancy.

6. Press the batter into the prepared pan, adding any dry berries or coconut that you want on top.

7. Bake for about 26-28 minutes, or until a toothpick inserted into the centre comes out clean.

8. Let the brownies cool completely before slicing.

Serve with chocolate ice cream and chocolate sauce, and enjoy!
