Quick and easy recipes: soba noodles with miso, steamed vegetables and spicy tofu
This tasty dish of noodles, spicy tofu and steamed veggies is a cosy autumn dish that is quick and easy to make and ready to serve in just under 30mins!

Ingredients
Dry noodles- Soba
Small bunch asparagus
2 small bunch steam broccoli
100g edamame ( shelled)
1 pack pressed tofu
3-4 generous handfuls baby spinach
6 scallions- sliced
Small ginger
2 garlic cloves
Chilli powder /salt pepper
Garnishes - black sesame seeds, spring onion
Method
Bring a large pot of salted water to boil for the noodles and cook according to instructions on the packet.
During the last couple minutes of cooking the noodles, add any veggies that need a quick blanching directly into the boiling noodle water (broccolini, asparagus, snow peas, edamame) for 1-2 minutes until they turn bright green. Drain and rinse with cold running water until chilled. Drain well and place in a large bowl.
To prepare your tofu, season with chilli powder, salt and grill on the pan (or alternatively you can bake in the oven).
In the pan toss onion, garlic, ginger and two tbsp of miso paste and 200ml of water.
Transfer the noodles and vegetable to the hot miso, cover and leave aside for 5 mins.
Serve it hot with spicy tofu, sesame seeds and spring onion. Enjoy!
